Breakfast is pumpkin pancakes topped with homemade pumpkin butter and caramel. I forgot how much I love pumpkin!

I am on my way to Australia! This is my dinner at the Dallas/Ft Worth airport. I had two servings of this dinner. This is cooked brown rice and vegetables at the airport. I found some packets of sauce and seasonings to give the food more flavors as it didn’t look like any sauces they had were healthy or plant-based.

I also grabbed a banana at a convenience store to use up the rest of the money on my Biolife debit card.

Healthy, plant-based food can be found anywhere. Even at airports.

Rob and I love this Red Lentil Chili. This is the second time we have had it this week! It’s the perfect combination of sweet and spicy. Plus, it’s extremely nutritious.

rye cereal with pineapple, dates and banana milk

Rye cereal for the first time! Super filling and nutritious. Rolled rye is similar to rolled oats, but heartier in taste and more filling. We served our rye cereal with chopped dates, banana milk, pineapple and cinnamon. This will keep me going for a long time.

Part of our lunch today was this mushroom (and zucchini) soup topped with sliced nori sheets and red bell pepper. This is another recipe that can be found in Single Serve Nutrition.

The first time Rob and I made this soup was when we were in Czech Republic last year.

vegan sushi

Date night! The picture quality is due to the mood lighting in the restaurant, O-Sushi. This is my first time at a sushi restaurant. We had lots of different kinds of sushi so I just took a snap of a cucumber sushi we ordered.

Does anybody else enjoy eating the pickled ginger by itself? I thought it was pretty tasty on its own.

Another banana smoothie for breakfast. Some may ask, “Don’t you ever get tired of eating bananas all the time?” No, not really. It’s good to have variety, but bananas are sweet, delicious and nutritious.

I’ll always enjoy eating a fresh, ripe, sweet banana in any form.

My afternoon meal today were these spring rolls stuffed with veggies and lentils, some banana ice cream and some beetroot salad.

hawaiian lentilsRob made a lentil dish called Hawaiian Lentils last night, so I heated the leftovers to eat for lunch.

Supper is Dal Bukhara.

We found these black lentils, also called urad, whilst shopping the other day. We decided to sprout them and make a dish. We had no idea what they would taste like, so we searched for recipes online. We adapted one of the recipes to fit our plant-based diet and the result was mouthwatering.

The urad have a very distinct texture. Chewy and slightly gummy but addicting. It’s a little bit like mincemeat.

We are having another breakfast of rye cereal this morning. Rolled, rye, chopped dates and pineapple doused in sweet banana milk and cinnamon.

I had beetroot salad again for lunch with these urad/carrot spring rolls and garlic sautéed spinach.

8.27-Sweet-Potatoes

I pressure-cooked some sweet potato for breakfast this morning and sprinkled it in cinnamon. It’s not a banana smoothie, but it’s just as sweet and just as delectable.

We found another type of bean at our local Indian store, moth beans, so we decided to try them out too. They were okay, but we the urad was a better discovery.

More sweet potato and cinnamon! I can’t decide which is better, sweet potato or pumpkin. They are both incredibly tasty. I don’t think I can choose.
