- 1/2 lb (250 g) dinosaur kale
- 1 medium brown onion, diced
- 2 cloves garlic, minced
- 2 tbsp white wine vinegar
- 1 can (14 oz) diced tomatoes (no salt added)
- 1 large sweet bell pepper, cut into strips
- 1 tbsp dry basil
- black pepper to taste
Begin by washing and de-stemming the kale. Remove any tough ribs from the leaves. Stack the kale leaves into a pile and slice into thin 1/2-1 inch strips. Put the kale in a large bowl and add the vinegar. Massage the kale with your hands for 2-5 minutes to tenderize the leaves. Set kale aside.
Add the onion and garlic to a hot medium nonstick fry pan and sauté the aromatics until the onions are translucent. Add the rest of the ingredients, cover and allow the mixture to cook for 5-10 minutes until the kale is fully cooked. Stir the contents of the pan every few minutes to ensure even cooking of the kale and prevent burning.
