Convenience and taste are both wrapped up in Minimalistic Apple Rolls without sacrificing health. The rice rolls require just 4 ingredients to make and a maximum of 15 minutes to prepare. Minimalistic Apple Rolls are an ideal meal for lazy or busy individuals. So whether you are having a relaxing sweatpants day, a hectic work day or something in between, you can always have a healthy meal in a snap.
Vegan and free of added sugar, oil, gluten, soy, nuts and seeds

- 1 sweet apple
- around 2 cups cooked brown rice, temperature between slightly warm and chilled
- 6 medium rice paper sheets
Slice the apple into medium-sized matchsticks. The easiest way to do this is to start cutting slices off the apple on one side until you must stop for the core; repeat on the opposite side. Do the same for the two remaining side of the apple until you are left with a rectangle that holds the core. Slice the apple pieces that contain apple flesh into sticks. Break up the rice if it is clumpy.
Soak a rice paper sheet in warm water until it becomes firm yet pliable. Don’t let it get too soft though. Around a minute of soaking will do.
Lay rice paper flat on chosen assembly surface. Around the middle of the rice paper, lay 1/6 of the apple matchsticks (4-6) and 1/6 of the cooked rice (2-4 tablespoons). Sprinkle with cinnamon.
Fold the left and right sides of the rice paper over the filling first, lastly the side closest to you.
Roll the rice roll away from you until it is fully wrapped and sealed. Repeat for remaining ingredients. Sprinkle with more cinnamon as desired and enjoy immediately.
Note: Try this recipe with another fruit and vegetables, too! One of my favorite variations is to recook the rice with grated carrot, warming spices and stock and add that to the apples for the filling.
