Citrus Sautéed Beet Greens is an easy and flavorful method to use nutritious beet greens as part of a meal. This recipe is light enough to eat in the summer and homey enough to enjoy in the winter.

Ingredients:
- 1 bunch beet stems and leaves, cleaned and chopped
- 1 small onion, finely diced
- 2 garlic cloves, minced
- 1 1/2 tablespoons white wine vinegar
- 1 lemon, juiced and zested
- Black pepper to taste
Preparation:
Add onion and garlic to pan and sauté until caramelized. Add beet greens and stems, lemon juice, zest and black pepper. Stir the mixture to evenly cook the vegetables. When the beet stems and greens are fully cooked, add the vinegar and sauté for 2-3 more minutes. Enjoy immediately.
