If you follow Carob Cherub on any social media sites (Facebook, Instagram, Twitter, Tsu, or Google+), you already know what Rob and I ate for our extensive and labor-intensive Christmas Eve dinner. We enjoyed:
- a version of my Earthy Shepherd’s Pie with mushrooms and lentils added
- lefse, a traditional Norwegian potato and wheat flatbread
- Christmas Trifle
- Vegan Nog.
The work returned beautiful and delicious results. However, we don’t always have the ability or desire to eat and cook like that all the time. One example is our Christmas dinner with Rob’s Nana and her boyfriend.
For multiple reasons, we didn’t wish to create an overly complicated meal for Christmas. I searched for ideas and came across a few rice recipes that included fruit and spices. Per usual, I didn’t find a recipe that suited my tastes. The other recipes called for animal products or highly fatty and refined products such as oil. We didn’t want to include any of those so I ended up making my own.
With just the idea of a sweet apple dish in mind, we instructed Rob’s Nana to buy apples, sultanas, and brown rice for us and in less than an hour (the rice took the most time) we had a delicious yet simple dish for our Christmas dinner.
Along with our Simply Festive Sweet Rice we also enjoyed a mixed salad containing iceberg lettuce, carrots, red onions, cherry tomatoes, cucumbers, pomegranate seeds and a light squeeze of lemon juice. The salad was a delicious and light way to begin our holiday dinner.
Nana included the pomegranate seeds at my request as I noticed the fruit in a basket when we arrived on Christmas afternoon and asked if I could taste it. I was delighted with my first experience with pomegranate. I look forward to eat them again. They provided a pop of sweetness to the salad that couldn’t be replicated or replaced with any other fruit.
Lastly, Rob and I quickly cooked a couple sweet potatoes lightly seasoned with black pepper and cinnamon that night. Overall, it was a delicious and nutritious Christmas dinner that I was pleased with.
I can’t pinpoint the characteristic of this recipe that makes it festive. Is it the warming cinnamon? The sweet apples? The flashes of red from the fruit? Regardless, if you decide to cook this recipe you too will find that this recipe suits the holidays quite nicely. Of course Simply Festive Sweet Rice can be made whatever day or time you fancy. But this recipe seems to be suited for holiday gatherings.
Try Simply Festive Sweet Rice and see that Christmases, Hanukkahs, Kwanzaas and other holidays don’t need to be stressful to be tasty. This recipe requires just 5 ingredients and takes minimal effort to prepare. Even though you won’t need to slave for hours in the kitchen doesn’t mean that Simply Festive Sweet Rice will be any less festive or delicious than high-maintenance recipes.
Vegan and free of added salt, sugar, oil, gluten, soy, nuts and seeds

Serves 2 large portions, 3-4 small portions
- 2 red apples, chopped into bite-sized pieces
- 2 tbsp apple cider vinegar (white works too)
- 3/4 cup raisins (sultanas)
- 1 tsp cinnamon
- 4 cups brown rice, precooked
Sauté apples in the vinegar for 5 minutes until they are slightly softened. Add the raisins and cinnamon and continue to heat through until they are plump. Add more water as necessary to keep the fruit from sticking to the pan. Once the apples are cooked through but still firm, combine the rice and fruit mixture. Warm the mixture on low heat until the all of the ingredients are thoroughly heated, again adding water as necessary. Enjoy immediately.
