Red Root Salad is a simple root salad recipe. It is tasty and packed with nutrients from the marinated beetroots and carrots. The salad will sweeten and develop even more flavor the longer you let it marinate in the refrigerator. Be careful when preparing and eating the salad though. The ruby red juice from the beetroots can stain clothes!

Serves 4-6

Ingredients:

  • 2 beetroots, grated
  • 2 carrots, grated
  • 1 parsnip, grated (optional)
  • juice of 1 lemon (around 1/2 cup)
  • 1 tbsp white wine vinegar
  • 1 tbsp dry parsley
  • Black pepper to taste

Preparation:

Prepare all ingredients and then toss together.  Chill at least overnight or for a few days in the refrigerator.Enjoy cold or room temperature. Will last for a week or more refrigerated.
