Supper was insanely delicious tonight.

We started off with Fungi Bok, a super tasty yet incredibly minimalistic way to eat your mushrooms and greens. After that we had a lentil dish Rob created: Hawaiian Lentils. I wasn’t sure how the pineapple would taste with the lentils, tomatoes and other spices. But it was so good. Bowl-lickin’ good. I just wish we had written down the recipe.

I started the Mini Mary Diet (related to the McDougall Maximum Weight Loss Diet) to lose the last 10-15 lbs I have yet to shed.

Basically, the diet is to eat the same starch for a period of around 10 days with a small variety of  fruits and vegetables. This encourages people to not eat out of pleasure but rather eat out of hunger. I will post some thoughts about my journey when I am done. This is from my first day; I am currently on day three.

Breakfast consisted of Quick Breakfast Risotto with a sliced apple. I wasn’t sure how I would like rice for breakfast but this turned out tasty. The apples added variety and the spices added flavor to the rice.

I created Sweet Carrot Risotto for lunch today. Not bad either. The food was better than this picture, I swear!

For dinner I ate rice cooked with blue peas and steamed broccoli.

I had Quick Breakfast Risotto for breakfast again today. I’m really liking it despite its simplicity. The risotto was served with half a lemonade fruit and pineapple chucks.

Lunch was simple today tasty, too. I made myself a fresh salad (lettuce, beetroot, carrot, lemon juice parsley, vinegar) to go with plain brown rice.

Another breakfast of Quick Breakfast Risotto and apple slices. You may be getting tired of rice all the time, but I’m actually enjoying it.

Lunch is a salad like yesterday’s and rice cooked with spinach, onion and spices. I still need to eat my greens after all.

Supper wasn’t exactly MMD-approved. The carrot sushi may be, but I don’t think the ginger dipping sauce was. Too many ingredients… to much flavor. Oops.

Breakfast is different today! I made an apple-rice bake. It’s basically the same ingredients as the Quick Breakfast Risotto but in a different style. It didn’t seem as filling though. That’s probably because the apple was baked instead of raw.

Lunch is brown rice cooked with black pepper, paprika and cabbage.

Dinner tonight is steamed carrots and peas and plain brown rice. Who ever knew steamed broccoli could taste so good?

Back to Quick Breakfast Risotto again. Except instead of breakfast, it was brunch. I wasn’t hungry this morning so I ate this brunch of risotto and pineapple between 10 and 11 am.

Alas, back to Quick Breakfast Risotto with apple again. Eh, I don’t mind.

Doesn’t get more MMD than this: a big bowl of brown rice. I also had salad to go along with this rice.

Brown rice topped with a spicy mushroom sauté. Geez, I haven’t had mushrooms in a long time. They tasted so good.

I’m still on the MMD but I have switched over to rye. This is a breakfast of Rye Cereal topped served with strawberries and topped with cinnamon. Not bad at all.

Lunch is baked rye with apple slices and cinnamon. Different from the usual Rye Cereal, but I still liked it.

Dinner was more baked rye. I added a shredded carrot and cinnamon to the rye while it cooked. I don’t know what else to do with rye other than make it sweet.

Today’s breakfast is Rye Cereal again topped with fresh strawberries, apple and cinnamon. Yes.

A “lupper” (is that a word? lunch/supper?) of cooked rye, cinnamon and Splenda. That Spenda… WOW. So sweet.

I’m no longer eating according to the Mini Mary Diet. Breakfast is similar to Carob’s Apple Crumble but was made with apple, passionfruit and strawberries. I call it Strapple Passion Crumble. A nice change of pace from the other meals I have been having.

 Indian Red Lentil Barley

Lunch consisted of Indian Red Lentils and Barley. Interesting… but not one of the best recipes I’ve created.

Even though I’m off the MMD, I’m still eating a lot of rye for breakfast. It’s so easy… and we have a lot. Rob and I purchased a large amount of rolled rye in preparation for me to do the Mini Mary Diet on rye. But I just couldn’t do it any more.

Anyways, Rye Cereal with a chopped apple, dates and cinnamon.

Five Ingredient Autumn Crunch

Lunch was lip-smackin’ good. Oh yes, I love my lovely sweet potatoes. This simple dish is Five-Ingredient Autumn Crunch.

Dinner, Moroccan Lentils, was tasty as well. Food seems much more appealing now that I’m not eating rye all the time. Find the recipe for these Moroccan Lentils in Single Serve Nutrition.
